Where are confetti and streamers? And where are also children in costume to liven up the streets after school? It is just because of the cold and polar wind, protagonists of these days, that Carnival has not contaminated us yet. Fortunately, the Florentine tradition allows us not to forget the Carnival, proposing succulent recipes. Of these, my favorite is the popular Schiacciata alla Fiorentina, perhaps because it has always been on my table during Carnival since I was a child. Here I propose my recipe: simple but delicious!
Get busy, so you will warm up your kitchens, as well as delight the palate.
SCHIACCIATA ALLA FIORENTINA
Dough:
- 15 tbs of flour
- 10 tbs of sugar
- 15 tbs of milk
- 7 tbs of seed oil
- 2 eggs
- 1 tsp of baking powder
- 1 tsp of vanilla
- ½ tsp of salt
Decoration:
- Powdered sugar
- Cocoa powder
PREPARATION
Put in a bowl flour, sugar, milk, oil and egg yolks. Mix with a mixer until the dough is smooth and quite soft. Then add the baking powder and vanilla. In another bowl, mix the egg whites and salt, and whisk. Then add to the other mixture and stir slowly with a spoon, until the egg whites are well blended.
Pour the mixture into a buttered/oiled and floured rectangular pan (about 30×20 cm).
Bake in preheated oven at 180 degrees static for thirty minutes.
Let cool before sprinkling with powdered sugar.
You can also decorate using cocoa powder, with shapes that you like.
And if you like the greedy version, fill with whipped cream or chantilly cream.
